
Signature Recipes
Cooking with a recipe is great—but let’s be real, how often do we actually have all the ingredients? Now, cooking based on what’s about to expire? That’s where the magic (and sometimes chaos) happens! Some of the best dishes are born from last-minute creativity, a little improvisation, and a ticking “best before” date. So, if your fridge is full of mystery items on the brink of extinction, your vegetables are looking a little too organic, your yogurt is on borrowed time, or your cheese is really embracing its funky side— don’t panic! let’s turn them into your next signature recipe. Who knows? You might just create a masterpiece… or at least something edible! Just kidding. It is always a masterpiece.
Bun Appetite!
Ingredients:
- 800g sweet potato
- 40g coconut flour
- 40g spelt flour
- 30g oat flour
- 40g ground almonds
- 10g buckwheat flour
- ½ tsp baking soda
- Pinch of salt
- 4 dried figs, chopped
- 50g dried cherries
- 20g dried cranberries
- Dark chocolate (small pieces for topping)
Instructions:
- Preheat the oven to 200°C (no fan, top and bottom heating).
- Roast the sweet potatoes for 40 minutes until soft. Let them cool slightly, then peel and mash until smooth.
- Combine the ingredients: Mix the mashed sweet potato with coconut flour, spelt flour, oat flour, ground almonds, buckwheat flour, baking soda, and salt until well incorporated.
- Fold in the dried fruits: Add the chopped figs, dried cherries, and cranberries, ensuring they are evenly distributed. The mixture should be slightly wet but hold its shape.
- Shape the buns: Take a small portion of the dough, roll it into a ball, and gently flatten it to form a bun. Repeat with the remaining mixture.
- Bake: Lower the oven temperature to 180°C and bake the buns for 40 minutes until firm.
- Add the chocolate topping: Remove the buns from the oven and immediately place a small piece of dark chocolate on top of each one. The heat will melt the chocolate, and as the buns cool, it will set into a smooth, glossy layer.
