Bun Appetite!

Ingredients:

  • 800g sweet potato
  • 40g coconut flour
  • 40g spelt flour
  • 30g oat flour
  • 40g ground almonds
  • 10g buckwheat flour
  • ½ tsp baking soda
  • Pinch of salt
  • 4 dried figs, chopped
  • 50g dried cherries
  • 20g dried cranberries
  • Dark chocolate (small pieces for topping)

Instructions:

  • Preheat the oven to 200°C (no fan, top and bottom heating).
  • Roast the sweet potatoes for 40 minutes until soft. Let them cool slightly, then peel and mash until smooth.
  • Combine the ingredients: Mix the mashed sweet potato with coconut flour, spelt flour, oat flour, ground almonds, buckwheat flour, baking soda, and salt until well incorporated.
  • Fold in the dried fruits: Add the chopped figs, dried cherries, and cranberries, ensuring they are evenly distributed. The mixture should be slightly wet but hold its shape.
  • Shape the buns: Take a small portion of the dough, roll it into a ball, and gently flatten it to form a bun. Repeat with the remaining mixture.
  • Bake: Lower the oven temperature to 180°C and bake the buns for 40 minutes until firm.
  • Add the chocolate topping: Remove the buns from the oven and immediately place a small piece of dark chocolate on top of each one. The heat will melt the chocolate, and as the buns cool, it will set into a smooth, glossy layer.
