When Feta met Sweet Potato

Ingredients:

  • 1 large sweet potato
  • 100g feta cheese
  • Lava salt (to taste)
  • Olive oil (for brushing)

Instructions:

Preheat the Oven:

  • Preheat your oven to 200°C (392°F).

Prepare the Sweet Potato:

  • Wash and peel the sweet potato.
  • Slice the sweet potato into 2 cm-thick disks using a paysanne cut (disk shape).

Season and Bake:

  • Arrange the sweet potato disks on a baking sheet lined with parchment paper.
  • Lightly brush both sides of the disks with olive oil.
  • Bake in the preheated oven for 40 minutes, turning them over after 20 minutes.
  • After flipping, sprinkle with a pinch of sea salt flakes.
  • Check the sweet potatoes after 30 minutes—they should be soft but still hold their shape. Adjust cooking time if needed based on thickness.

Prepare the Feta:

  • While the sweet potatoes are baking, mash the feta into a smooth paste.

Assemble the Stacks:

  • Once the sweet potatoes are done, take two disks and place a dollop of feta between them to create a stack.
  • Repeat for the remaining disks and feta slices.

Garnish and Serve:

  • Sprinkle lava salt on top of each stack for garnish and an added flavour boost.
  • Serve warm and enjoy!
