When Feta met Sweet Potato

Ingredients:
- 1 large sweet potato
- 100g feta cheese
- Lava salt (to taste)
- Olive oil (for brushing)
Instructions:
Preheat the Oven:
- Preheat your oven to 200°C (392°F).
Prepare the Sweet Potato:
- Wash and peel the sweet potato.
- Slice the sweet potato into 2 cm-thick disks using a paysanne cut (disk shape).
Season and Bake:
- Arrange the sweet potato disks on a baking sheet lined with parchment paper.
- Lightly brush both sides of the disks with olive oil.
- Bake in the preheated oven for 40 minutes, turning them over after 20 minutes.
- After flipping, sprinkle with a pinch of sea salt flakes.
- Check the sweet potatoes after 30 minutes—they should be soft but still hold their shape. Adjust cooking time if needed based on thickness.
Prepare the Feta:
- While the sweet potatoes are baking, mash the feta into a smooth paste.
Assemble the Stacks:
- Once the sweet potatoes are done, take two disks and place a dollop of feta between them to create a stack.
- Repeat for the remaining disks and feta slices.
Garnish and Serve:
- Sprinkle lava salt on top of each stack for garnish and an added flavour boost.
- Serve warm and enjoy!
